Merete Holst, Founder & CEO, Head of Gastronomy
Merete is passionate about raising the bar for what a meal can be—whether it’s served in a gourmet restaurant, a hospital, or as the daily lunch at a workplace. She lives for meals that are good for the planet and our own health—without compromising on flavour. With LOCA Canteens, Merete and her partner Dorte Juhl Østergaard have created a modern canteen concept that aligns with the UN Sustainable Development Goals, actively contributes to a greener world, and maximizes enjoyment every day, because “Every Meal Matters.”

Pii is a chef with both heart and hands firmly rooted in the green. After many years in fine dining, sushi restaurants, and the canteen world, she has found her place with us at LOCA, where she works daily to show how far taste, well-being, and climate-conscious choices can go when we embrace plant-based cuisine. She believes in food that is good for humans, the planet, and our shared future. At the European Environment Agency, she leads a kitchen where health, responsibility, and the best seasonal local ingredients go hand in hand.
