The LOCA Manifesto is our vision for the future of sustainable gastronomy. A vision of how, across global goals and national borders, taste and the joy of food can drive positive change in the gastronomic world we live and breathe for.
Across the globe, the food industry has long contributed to a range of human-made challenges. The time has now come for gastronomy to step forward and become an active part of the solution to some of the world’s most pressing issues.
No one can do everything, but everyone can do something. With flavour, responsibility, and a shared love of food, we hope you will take the next step together with us.

We are LOCA – and we know that food can change the world

We are restaurants, people, flavours, and convictions. We are community and craftsmanship. We are vegetables with bite and knowledge with an edge. We believe in the shared meal as a gathering point – and as a starting point for something greater.

We work with gastronomic sustainability. Not as an end in itself, but as a necessity in the world we are part of. That is why we set concrete goals for food, people, organisation, partnerships, and our responsibility in the world.

We know we cannot do everything – but we are committed to doing what we can, as well as we possibly can. And we will continuously work to strengthen and improve our own ambitions and standards.

The LOCA Manifesto is the cornerstone of this vision – our point of departure and our promise to you, to our colleagues, and to the world.

The LOCA Manifesto was developed in collaboration with Basque Culinary Center as part of the Gastronomy Shapers project in 2021. Basque Culinary Center is a pioneering academic institution founded by leading Basque chefs in collaboration with Mondragon University. Its mission is to contribute through education, research, innovation, and by promoting gastronomy and health. Its international advisory board includes some of the most influential profiles in the industry, such as Ferran Adrià, Michel Bras, Heston Blumenthal, Dan Barber, and René Redzepi.
