ALMANAK I OPERAEN
is the taste of Denmark all year round – our Danish tribute to the French brasserie, where the heart beats especially for local, seasonal vegetables, fish and seafood. The name comes from the old Danish word for “year calendar,” reflecting how we follow the rhythm of the seasons and serve dishes that capture a moment in time – the flavors of Denmark, enhanced by French quality and elegance.
Located in Copenhagen’s iconic Opera House, we offer a magnificent view of the city – a culinary experience framed by the beauty of the capital.
KILDEN I HAVEN
We capture the essence of the Danish seasons and celebrate the very best from our land and waters. As Copenhagen’s modern city inn, we work with seasonal Danish vegetables, fish, and seafood—always with care for animal welfare and ingredient quality.
We take flavor seriously, but never ourselves. We love Danish cuisine, yet we are not afraid to play with it.
We are located right in the heart of Tivoli’s green and enchanting gardens—a place where great flavors meet beautiful surroundings.
PAULA
is Carlsberg City’s luxury bistro, where classic French craftsmanship meets Nordic purity and Japanese precision. Here, flavor takes center stage: oysters, caviar, truffles, lobster, champagne, and Burgundy – always complemented by butter, cream, and the joy of indulgence.
We call it green hedonism: a kitchen where the season’s finest ingredients and deep respect for nature go hand in hand with everything you dream of to treat yourself. Paula is the place to enjoy a glass and a single dish or to immerse yourself in a full evening that feels like pure abundance.
DOLORES
Dolores is Carlsberg Byen's citizen of the world – a food and wine bar where the whole world is our gastronomic playground. We work from one dogma: the ingredients must be fantastic.
The menu features shareable dishes inspired by San Francisco’s colorful Mission District – from crispy Korean Fried Mushrooms and Buffalo Cauliflower to Danish Grilled Fish and Green Dishes full of flavor and personality. Experience an informal food and wine experience in the heart of Carlsberg Byen, where fire, energy and curiosity meet.
RADIO
We are a modern, informal restaurant with deep roots and a curious spirit. We serve dishes that capture the flavors of the Danish seasons – inspired by Asia and the rest of the world. Our menu changes monthly to stay in tune with nature and keep both our chefs and guests on their toes.
We believe that great taste comes from quality ingredients, skilled craftsmanship, and a genuine desire to delight our guests. In 2025, we were awarded a Bib Gourmand, highlighting our commitment to delivering exceptional value – a core part of our story.
