FUNGA FARM
Urban mushrooms with big flavour and a small footprint
At Funga Farm, mushrooms are cultivated as small sustainable wonders – rich in umami and natural depth, yet grown with minimal climate impact. Their specialty mushrooms are produced in Brøndby using selected residual resources in a circular system that yields high-quality edible mushrooms. Their curiosity and experimental approach reflect the LOCA Manifesto’s ideas of responsible and innovative food production.
VARDE ÅDAL
Ecological diversity from the Wadden Sea
In the middle of the Wadden Sea National Park, Eva and Torben run a farm where lambs, pigs, ducks and geese live in harmony with nature. The entire production – from vegetables to their own slaughterhouse – is based on a circular mindset. Varde Ådal's holistic practices perfectly reflect the LOCA Group's wishes for sustainable and responsible production.
GRØNHOLTGAARD
Locally grown with heart and hands
On Glænø near Skælskør, Neel and Carsten cultivate herbs under open skies – harvested by hand and delivered directly from field to kitchen. Everything is done with respect for nature and the seasons. Living soil – living food
Godis Grønt is an organic farm in Lejre, where Christina and Fredrik grow more than 60 different crops using regenerative methods that enhance soil fertility and promote biodiversity. This passion for living soil and the short distance from field to plate is the essence of the LOCA Manifesto’s principles of food that respects both nature and people.

Ka Potatoes with history and care
On the old seabed soils by Odense Fjord, Sanderumgaard Estate grows unique potatoes with a fine yellow colour, smooth skin and delicate flavour. They are cultivated gently using reduced soil tillage, preserving natural moisture and strengthening biodiversity while reducing climate impact. With roots back to the 1700s and a modern operation prioritising soil health over quantity, Sanderumgaard truly reflects LOCA’s commitment to responsible production and uncompromising quality.

For generations, Højvang Grønt has grown onions in the mild coastal climate of Southwest Zealand – now complemented by broccoli, cabbage and squash. Regenerative greens from South Zealand
In a former apple orchard near Præstø, Charlotte and Frederik grow vegetables, herbs, and edible flowers using organic and regenerative principles that improve soil health and reduce CO₂ emissions. Gartnerhjælpen is an initiative from our distributor AB Catering, allowing Danish growers to sell vegetables that deviate in size or appearance. Despite being perfect in flavour, these vegetables are often discarded – a practice we want to challenge.
