HUNTING, FISHING AND FORAGING
NORDVILDT
Game with respect for nature
Nordvildt is a company run by passionate hunters in North Zealand who know nature and animals intimately. Nordvildt supplies meat from game that has lived a free life, without stressful slaughter or unnecessary transport. With a focus on ethical hunting and short supply chains, Nordvildt and LOCA Manifesto represent the ambition of animal welfare, taste and responsibility in one.

A partnership that reflects LOCA’s goal of enjoying the sea in harmony with nature’s cycles.
FISKEHALLEN TVILLING
Climate-responsible fishing with transparency and foresight
At Tvilling in Hirtshals, customers can see the CO₂ footprint of every fish – a new level of transparency. They follow WWF recommendations, MSC and ASC certifications, and advise customers on greener choices. A collaboration that matches LOCA’s quest for knowledge, responsibility, and action.
ÅDAL ØRRED
Organic aquaculture with care for nature and flavour
In Vejle Ådal, Ådal Ørred produces organic trout as a sustainable alternative to salmon. Here, experience is combined with research into natural methods that strengthen fish health and reduce the need for medication. The result: fresh trout with low climate impact – and exceptional quality.
LYKSVAD CAVIAR
Danish caviar with full traceability and respect
Lyksvad produces Denmark’s only caviar on recirculated groundwater – without additives and with full traceability. The water is reused as fertiliser, and the harvested fish are subsequently used in LOCA’s kitchens. A complete use of resources that reflects the LOCA Manifesto’s goal of responsible production with minimal waste.
THORUP STRAND
Tradition and sustainability on the West Coast
In Thorup Strand, boats are still pulled up onto the beach, as they have been for generations. Here, fish are caught from small vessels with low environmental impact and without bottom trawling. The Nature-Friendly Fishing label guarantees both sustainability and respect for the coastal community – in line with the LOCA Manifesto's ideals of tradition and responsible production.
VILDE URTER
The wilderness as culinary inspiration
Michael Fitzner’s Vilde Urter brings nature’s raw abundance into gastronomy. They supply wild herbs, plants and flowers that challenge and enrich our kitchens – perfectly aligned with our goals of more flavour and more biodiversity.
